Title: Analyzing autonomous delivery acceptance in food deserts based on shopping travel patterns
Food desert communities in the US have a widely recognized gap between the demand for healthy foods and the minimum order size that makes it worthwhile for food purveyors to deliver to such neighborhoods, thereby creating delivery deficiencies. A diverse set of mobility constraints and activity-travel patterns exist for disadvantaged segments in these communities, especially the elderly, unemployed, and socially excluded. Appreciating this complexity, an effective solution would be to improve the food access of such communities by providing faster, inexpensive, and flexible online deliveries of healthy foods. However, little is currently known about the shopping travel pattern in food desert communities and the associated mobility inequalities. This paper fulfills this critical research gap and quantifies the differences in shopping travel behavior observed among consumers residing in food deserts and food oases using data collected from Portland and Nashville Metropolitan areas. The paper subsequently captures the perceived acceptance of autonomous delivery robots (ADRs) among these consumers to overcome their mobility inequalities. The results indicate that food desert residents aged between 18 and 25 years, African Americans and those earning more than $75,000 are more likely to engage in internet shopping than food oasis residents. Despite the perceived potential of ADRs to reduce the mobility inequalities in food deserts, acceptance levels for this emerging technology are found to be significantly less among food desert residents, especially among older generational cohorts and less qualified.     Food desert communities face persistent barriers in accessing affordable fresh and healthy foods, particularly for the underserved and limited-resourced minority population. This research brief proposes an integrated design concept examining human-environment dynamics of food deserts to identify strategies that would provide effective planning to prevent, prepare for, or respond to disruptive events such as natural disasters or pandemics in the future. The North Carolina example we describe identifies the potential overlapping areas between food deserts and number of COVID-19 cases to demonstrate how an unpredictable event could exacerbate public health in food desert communities to a greater extent than in communities with better food access, availability, and accessibility. The improved understanding of food systems could help in addressing unprecedented challenges such as those due to the COVID-19 crisis.

  2. Food insecurity is a problem that should not be overlooked in America. In 2022, about 1.3 billion people were food insecure, an increase of 10% from the previous year. Food deserts, an area with low income and low access to nutritious foods, can be characterized by 5A’s: availability, accessibility, accommodation, affordability, and acceptability. As more investments go into building infrastructure for population growth, the local food industry must expand for both current and new residents. One strategy to combat food deserts is to use the Internet and e-commerce like online food services can contribute to solving food insecurity. From Generation X to Millennials to Generation Z, the adoption of the Internet is rapid. However, these services have additional costs for the consumer. The goal of this research was to examine the current e-commerce solutions to food deserts in a local area and review the literature on how e-commerce can alleviate food deserts. Data were collected from published government and company sites. Results reveal Internet accessibility continues to be an issue for reliable e-commerce use. E-commerce can alleviate food deserts by reducing the cost for both consumers and businesses, accommodating various groups of people, and focusing on rural areas.

  3. Abstract The majority of food in the US is distributed through global/national supply chains that exclude locally-produced goods. This situation offers opportunities to increase local food production and consumption and is influenced by constraints that limit the scale of these activities. We conducted a study to assess perspectives of producers and consumers engaged in food systems of a major Midwestern city. We examined producers’ willingness to include/increase cultivation of local foods and consumers’ interest in purchasing/increasing local foods. We used focus groups of producers (two groups of conventional farmers, four local food producers) and consumers (three conventional market participants, two locavores) to pose questions about production/consumption of local foods. We transcribed discussions verbatim and examined text to identify themes, using separate affinity diagrams for producers and consumers. We found producers and consumers are influenced by thestatus quoand real and perceived barriers to local foods. We also learned participants believed increasing production and consumption of local foods would benefit their community and creating better infrastructure could enhance efforts to scale up local food systems. Focus group participants also indicated support from external champions/programs could support expansion of local foods. We learned that diversifying local food production was viewed as a way to support local community, increase access to healthy foods and reduce environmental impacts of conventional production. Our research indicates that encouraging producers and consumers in local food systems will be more successful when support for the local community is emphasized.

    Abstract. This paper investigates the spatial differences in fresh vegetable spending in Guilford County, North Carolina. We create a geo-coded spatial-temporal database for both human factors and natural factors to understand why food deserts have become a serious issue in a county with many farming activities. We find that residents living in food deserts do not buy enough fresh vegetables compared with their counterparts, even when they are shopping at full-service grocery stores. Social-economic factors are most sensitive and are important determinants of fresh food demand. Using an agent-based toy model, we find that fresh vegetable demand in each census tract in Guilford County varies to a large extent. The results suggest that the formation of food deserts may root from the demand side.

Food insecurity, an economic and social condition where households have limited access to nutritious food, is a long-standing and growing problem in both the rural and urban areas of the United States. Food deserts refer to areas that do not have adequate food access to affordable and nutritious food. Food deserts can be characterized by availability, accessibility, accommodation, affordability, and acceptability (5A’s). This research investigates food deserts in Mecklenburg County, North Carolina, which includes the city of Charlotte. The food insecure population estimate in Mecklenburg County is about 15% which is higher than the national average of 11%. Using visual analytics, a combination of analytics and human factors, this study aims to examine how age, education, and income are related to food deserts in Mecklenburg County. Data gathered from US Census Bureau was used for analysis. Results indicated that education and food desert status, and age and food desert status in Mecklenburg County were related.
