Food insecurity, an economic and social condition where households have limited access to nutritious food, is a long-standing and growing problem in both the rural and urban areas of the United States. Food deserts refer to areas that do not have adequate food access to affordable and nutritious food. Food deserts can be characterized by availability, accessibility, accommodation, affordability, and acceptability (5A’s). This research investigates food deserts in Mecklenburg County, North Carolina, which includes the city of Charlotte. The food insecure population estimate in Mecklenburg County is about 15% which is higher than the national average of 11%. Using visual analytics, a combination of analytics and human factors, this study aims to examine how age, education, and income are related to food deserts in Mecklenburg County. Data gathered from US Census Bureau was used for analysis. Results indicated that education and food desert status, and age and food desert status in Mecklenburg County were related.

A Visual Analysis of Food Availability in Davidson County NC
Community Food Strategies provides guidance and tools to local food networks in North Carolina to empower the creation of equitable policy change at all levels. Their vision is the realization of an equitable food system that improves the quality of life for all. In Davidson County, the recently formed Local Food Network, created under the guidance of Community Food Strategies, is working to create a more equitable and sustainable food system and is evaluating how best to apply their resources toward this end. The county is largely rural, and rural areas tend to have lower food access. Two cities, Lexington and Thomasville, have experienced economic depression over the past three decades with the exodus of furniture manufacturing overseas and as such, both cities have communities that suffer from poverty and food insecurity issues. In this research, we use visual analytics and spatial analysis to build a survey and analysis of local food availability for the county. Visual analytics is increasingly being applied to applications like this to increase understanding of large datasets and improve decision making. This research provides a base analysis for the Local Food Network to present the state of the local food system to potential partners who can help create policies that will increase equity and availability of food to everyone in the county.

null (Ed.)Abstract Local food systems are growing, and little is known about how the constellation of farms and markets change over time. We trace the evolution of two local food systems (Baltimore County, Maryland and Chester County, Pennsylvania) over six years, including a dataset of over 2690 market connections (edges) between 1520 locations (nodes). Longitudinal social network analysis reveals how the architecture, actor network centrality, magnitude, and spatiality of these supply chains shifted during the 2012–2018 time period. Our findings demonstrate that, despite growth in the number of farmers’ markets, grocery stores, farms and restaurants in both counties, each local food system also experienced high turnover rates. Over 80% of the market connections changed during the study period. Farms, farmers’ markets, and grocery stores showed a 40–50% ‘survival’ rate, indicating their role in sustaining local food systems over longer time periods. Other actors, such as restaurants, had a much higher turnover rate within the network. Both food systems became more close-knit and consolidated as the center of gravity for both local food systems pulled away from urban areas toward rural farmland. Evidence of both growth and decay within local food systems provides a new understanding of the social networks behind local food markets.more » « less

Abstract Achieving large-scale, transformative climate change adaptations in agriculture while mitigating further climate impacts and supporting sustainable and equitable rural livelihoods is a grand challenge for society. Transformation of the agri-food system is necessary and inevitable, but the extent to which transformation can be intentionally guided toward desirable states remains unclear. We argue that, instead of targeting leverage points (LPs) in isolation, coordinated interventions at multiple LPs and their interactions are necessary to create a broader system transformation toward more adaptive futures. Using the southeastern United States of America as a case study, we conceptualize a way of doing transformation research in agri-food systems that integrates multiple theoretical and practical perspectives of how transformative pathways can be constructed from ‘chains’ of interacting LPs. We outline several principles for transformative research, the core of which are participatory, transdisciplinary, and convergence research methods needed for articulating a shared vision. These principles embrace an action-oriented approach to research in which the act of assembling diverse networks of researchers, stakeholders, and community partners itself can activate community- and regional-level LPs to scale up changes. Finally, we present tangible examples of specific LPs and their interactions targeted by agri-food system interventions currently underway or planned. This work offers an ‘anticipatory’ vision for agri-food system transformation research that recognizes the need to normatively create an enabling environment to build momentum toward shared visions of secure, equitable, and sustainable regional agri-food systems.more » « less

For several decades, food policy councils (FPCs) have led the effort to place food on local government policy agendas. While FPCs are making progress in supporting local food systems, they also face institutional and organizational challenges. In recent years, a handful of cities and counties have endeavored to further food system reform with the establishment of full-time government staff positions focused on food policy. As of spring 2020, there were 19 confirmed food policy positions housed in local governments across the United States. While there is considerable literature on FPCs, little research has been published regarding food policy staffing in local governments. Accordingly, this study uses original in-depth interviews with 11 individuals in municipal or county food policy positions to understand the purpose and function of governmental food policy staff positions and their impact on local food systems. Our findings suggest that these positions help to coordinate and nurture local food programs and policies and have the potential to facilitate meaningful participation of individuals and groups in the community in food system reform. We discuss the potential benefits and challenges for governmental food policy positions to support food democracy, and provide the following recommendations for communities interested in establishing or strengthening similar positions: (1) identify and coordinate existing opportunities and assets, (2) foster and maintain leadership support, (3) root the work in community, (4) connect with other food policy professionals, and (5) develop a food system vision.more » « less

Abstract Urban populations globally are expected to increase by approximately 2.5 billion by 2050. Much of this growth is taking place in African cities, where about 40% of Africans live in urban areas with populations of less than 250,000. In many of these cities, rapid urban growth has outpaced economic and social development, resulting in high levels of urban poverty and widespread food insecurity. As one response strategy, urban households may leverage their linkages with rural areas and other towns or cities to supplement their food consumption, for example through food remittances or food purchases from remote retailers. While this strategy has been found to occur among inhabitants of large cities where existing research on urban food systems and urban food linkages with other areas has focused, the dynamics in smaller cities are likely different. In this paper, we draw on data from 837 surveys collected in 2021 to investigate household food sourcing strategies across 14 urban areas in Zambia with populations less than 100,000. We find that rural-urban food linkages are dominated by grains while urban-urban food linkages are predominantly composed of higher value foods. Our data further suggest that urban area characteristics explain more of the variability in food sourcing behaviors than household level characteristics, and that urban food purchasing preferences in secondary urban areas are sensitive to the food retail landscape available to households. These relationships highlight the disparate role that rural and urban linkages play across cities of different sizes. They suggest a need for food-related policies to consider diverse urban food systems among smaller cities.more » « less
