Interest in craft beers is increasing worldwide due to their flavor and variety. However, craft breweries have high water, energy, and carbon dioxide (CO2) demands and generate large quantities of high-strength waste and greenhouse gases. While many large breweries recover energy using anaerobic digestion (AD) and recapture CO2 from beer fermentation, little is known about the economic feasibility of applying these technologies at the scale of small craft breweries. In addition, compounds in hops (Humulus lupulus), which are commonly added to craft beer to provide a bitter or “hoppy” flavor, have been shown to adversely affect anaerobic microbes in ruminant studies. In this study, biochemical methane potential (BMP) assays and anaerobic sequencing batch reactor (ASBR) studies were used to investigate biomethane production from high-strength craft brewery waste, with and without hop addition. A spreadsheet tool was developed to evaluate the economic feasibility of bioenergy and CO2 recovery depending on the brewery’s location, production volume, waste management, CO2 requirement, energy costs, and hop waste addition. The results showed that co-digestion of yeast waste with 20% hops (based on chemical oxygen demand (COD)) resulted in slightly lower methane yields compared with mono-digestion of yeast; however, it did not significantly impact the economic feasibility of AD in craft breweries. The use of AD and CO2 recovery was found to be economically feasible if the brewery’s annual beer production is >50,000 barrels/year.

Managing a Craft Brewery: Competitive, Legal, and Environmental Forces
The number of craft breweries and the volume of beer they produce continue to increase in the United States. Small entrepreneurial craft brewery businesses produce limited quantities of specialty beer, also known as craft beer. As of 2018 the state of Montana had the second most craft breweries per capita in the United States. In addition to competitive industry forces, legal and environmental forces are two of the most salient concerns for craft brewery businesses in Montana and throughout the United States. A case study about Montana Hop Brew, a Montana-based craft brewery, is presented. The case highlights the entrepreneurial nature of small craft breweries and describes competitive industry, legal, and environmental forces that Montana Hop Brew faces. Teaching notes complete with learning objectives, required and supplemental readings, a student exercise, and discussion questions are available to assist with delivering the case.

Climatic variability and shifting weather patterns, resulting in extreme weather events and natural disasters, pose risks to small businesses in the United States. This is particularly true in coastal regions of the southeast United States where extreme events such as hurricanes, flooding, and thunderstorms are projected to increase in frequency and intensity. Yet, the vast majority of small business owners do not have a disaster plan in place and an estimated 40% to 60% of small businesses that have experienced a natural disaster never reopen. This teaching case explores the impact of climatic trends and weather on one location of an outdoor tourism industry business in the coastal community of Virginia Beach, Virginia. The case draws from observed weather and sales data for the local small business. Students will draw from descriptive statistics, statistical analysis, and graphs to explore (a) long-term climatic trends for the business; (b) relationships between small business sales and local weather; and (c) strengths, weaknesses, opportunities, and threats relative to weather conditions and climate change. Instructors can give the body of this document to students. They can also make use of the supplemental teaching notes to assist them with teaching this case.more » « less

The purpose of this study was to learn more about U.S. small-sized apparel and sewn products manufacturing firms through an analysis of their firm performance with the multiple aims of improving management practice and advancing the reshoring of U.S. apparel manufacturing. We know relatively little about new companies and small-sized entrepreneurs who operate apparel production businesses, and specifically what impacts their perceptions of firm performance in navigating the complex and rapidly changing apparel industry. We build upon stakeholder theory and the knowledge-based view of the firm. Accordingly, this study involved a quantitative investigation as to what degree the following three attributes explained a subjective evaluation of U.S. apparel producing firm performance; entrepreneurial orientation, new product; and the ability of the firm to acquire knowledge in this competitive industry. Results of hierarchical multiple regression suggest that all three variables predicted significant change in firm performance with an adjusted R2 of 0.29.more » « less

In launching small businesses, particularly in advanced sectors like artificial intelligence (AI), Internet of Things (IoT), or biotech, disadvantaged groups like low-income people encounter extra challenges in accessing funding and investment. While federal and private sector efforts are underway to support businesses owned by women and minorities, there is still much progress to be made in bridging the investment gap. The Small Business Administration (SBA 2013) started providing $3.5 billion annual support through its Small Business Innovation Research (SBIR) program, with a directive from the Small Business Act to prioritize women and underserved groups. Typically, PhD degrees at US institutions focus on preparing graduates for academic positions, while only 11% of STEM PhDs would successfully achieve tenure-track faculty positions. To foster innovation and increase the participation of underrepresented minorities in emerging industry startups and secure U.S. competitiveness in the global arena, the National Science Foundation (NSF) introduced the Innovative Postdoctoral Entrepreneurial Research Fellowship (IPERF) program managed by the American Society of Engineering Education (ASEE). The first evaluation of the IPERF program shows that one-third of the fellows who joined the STEM entrepreneurial program stayed either in their startups or joined other entrepreneurial fields. This seems to be an interesting indicator of the increased entrepreneurship interest of STEM postdoctoral fellows, especially if the vast majority of them represent underserved communities.more » « less

Small-scale anaerobic digestion (AD) can be an effective organic waste management system that also provides energy for small businesses and rural communities. This study measured fuel production from digestions of single and mixed feedstocks using an unheated, 2 m3 digester operated continuously in a temperate climate for over three years. Using local food waste, brewery waste, grease waste, and agricultural residues, this study determined that small-scale AD co-digestions were almost always higher yielding than single feedstocks during psychrophilic operation and seasonal temperature transitions. Agricultural residues from Miscanthus x giganteus had the greatest impact on biomethane production during co-digestion (4.7-fold greater average biogas %CH4), while mesophilic digestion of brewery waste alone produced the most biogas (0.76 gCH4 gVS−1 d−1). Biogas production during the transition from mesophilic to psychrophilic was temporarily maintained at levels similar to mesophilic digestions, particularly during co-digestions, but biogas quality declined during these temperature shifts. Full-time operation of small-scale, unheated AD systems could be feasible in temperate climates if feedstock is intentionally amended to stabilize carbon content.more » « less
